Fried Grouper Sandwich & Baked Fish Recipes - FRUGAL FITNESS

This week I?m sharing recipes that I used to make the fish we caught! Earlier this week I went?deep sea fishing?with my dad and we came home and immediately tore up the giant grouper we caught. That?s kind of our thing.

It?s pretty amazing when one minute you?re on the Gulf of Mexico reeling in a fish and the next, that same fish is on your dinner table. I almost can?t think about it that way, I almost feel bad and yes, it?s a little weird.

Except that it was soooo good.

So of course on the way home I was Googling a fried grouper sandwich recipe because down here we do fried grouper sandwiches. Our area of Clearwater and St. Pete is home to some of the best fried grouper sandwiches anywhere in the world. I can?t confirm that last part (I?ve never had grouper in any other part of the world) ?but that?s what I hear anyways.

Not to worry, I don?t only have fried here, I also caught some snapper and made an amazing baked snapper that was to die for (you can substitute salmon for it, we made that too but we didn?t catch that one, we bought it.) By the way, I think my body was craving Omega 3?s from the amount of fish we ate this week. Which was fine with me! I?ll give you both recipes in this post, starting with the fried grouper sandwich adapted from?this recipe?I found online that copies a restaurant here in St. Pete Beach.

Fried Grouper Sandwich?

?Ingredients:

  • 2 lbs Grouper
  • 2 tsp?Greek seasoning. I didn?t know what this is (but now I do), I didn?t have it at the time, I used salt and pepper.
  • 1 1/2 tsp salt (divided)
  • 1 tsp pepper
  • 2 1/4 cup flour
  • 1/4 cup cornmeal
  • 2 tsp baking powder
  • 2 cups cold beer (we used Coors Light and I?m not sure if it matters what kind).
  • 1 large egg, lightly beaten
  • vegetable oil
  • buns
  • Tartar sauce

Directions:

Cut fish into three-inch strips. Season them with 1 tsp salt, 1 tsp greek seasoning and 1/2 tsp pepper. Combine flour, remaining seasoning, salt & pepper, stir well and then add the 2 cups cold beer. Stir in beaten egg. Heat 1 inch of oil in pan. When the oil?s nice and hot, coat the fish in the batter on both sides and put each piece in the pan. Don?t crowd the pan though, only put a few in at a time. After about 2-3 minutes or when the bottom half of the fish appears cooked, flip them and cook for an additional 2-3 minutes. Cut into one to make sure it?s flakey in the center (you might have to add another minute onto cooking time depending on thickness of fish.) Drain on paper towel.

Put it on a bun with some tartar sauce and voila! YUM. Serve with coleslaw and perhaps some frozen french fries that you may or may not have purchased on the way home from deep sea fishing. File under ?indulgence.? Sometimes grouper tastes ?fishy? but when it?s that fresh, it tastes like a delicious white fish.

Next up! A healthy baked fish recipe!?Because I feel the need to balance out the fried.

You can really swap out any fish in this recipe, I used the snapper I caught and I also made salmon this way too, both were delicious and both were HUGE HITS with the kids by the way. This recipe was adapted from a?Pinterest recipe?too.

Baked Fish in a Bag

Ingredients:

  • Salmon, snapper or tilapia (any kind you want!)
  • Butter
  • lemon slices (3 slices of lemon per fish)
  • aluminum foil

Preheat oven to 350. Slice the lemon. Cut a large square of aluminum foil and put the fish fillet on a bed of two or three lemon slices. Place two thin pats of butter along top of fish.

Wrap the foil tightly by folding the sides up and then rolling the top down so that no air can get in or out (the fish will steam in the foil ?bag?). Do this for each slice of fish. Then, put the fish in their individual foil bags on a cookie sheet and place in the oven. Bake for 25 minutes or until flaky. Delicious! Serve with rice or delicious veggies. The lemon and butter becomes a yummy sauce, too, so feel free to use that too!?Mmmmmmmm.
